The damper system allows for control of the heat inside the smoker without lifting the lid. Made of rust-resistantaluminum, and positioned in the lid and bowl to provide optimum air flow.
Simply adjusting the damper provides temperatures low enough to smoke food for hours.
There is one damper on the lid and three additional dampers on the bottom of the bowl.
Closing all dampers will cut the oxygen flow and help extinguish the coals.
Two plated steel cooking grates provide ample room to smoke two large items at once.
The cooking grates are spaced enough distance apart that you can easily have two pork shoulders, or two layers of ribs smoking at the same time. Just remember that whatever is cooking on the top, will be seasoning the item below as it cooks.
