Traeger Roasted Corn Succotash

ROASTED CORN SUCCOTASH

INGREDIENTS:

 

  • 4 EARS OF CORN
  • 1 ZUCCHINI, THINLY SLICED
  • 3 TBSP OLIVE OIL, DIVIDED
  • 1 LB GREEN BEANS,
    CLEANED AND TRIMMED
  • 1 ONION, THINLY SLICED
  • 2 TBSP SHERRY VINEGAR
  • 1 CUCUMBER, CUT INTO CUBES
  • 1 PINT CHERRY TOMATOES, HALVED
  • 1/4 CUP BASIL CHIFFONADE
  • SALT AND PEPPER, TO TASTE

PREPARATION:

 

  1. When ready to cook, set the temperature to High and preheat, lid closed for 15 minutes.
  2. Place the ears of corn directly on the grill grate.
  3. Toss the green beans with 1 Tbsp olive oil and season with salt and pepper. Place on a sheet tray and place the sheet tray on the grill grate next to the corn.
  4. Cook the green beans for 8-10 minutes or until lightly browned and cooked through.
  5. Cook the corn until the exterior is lightly browned and kernels are tender, about 15-20 minutes. Remove from the grill and let cool at room temperature.
  6. When the corn is cool enough to handle, cut the kernels from the cob and place in a medium bowl.
  7. Cut the green beans into 1-inch sections and place in the bowl with the corn.
  8. Place the remainder of the ingredients into the bowl with the corn and toss to mix well.
  9. Check for seasoning with salt and vinegar. Enjoy!
