Weber Flank Steak Tacos

Flank Steak Tacos
This is an easy recipe to do. Direct grilling for all items. Be sure the grill is hot enough to get a good sear on the steak. A prepared nice tomato or tomatillo salsa can be used in place of the grilled salsa of the recipe. When plating this to serve, if you do not have a taco holder available, then use a toothpick to hold the taco together by driving it through the middle of the taco on either side to help hold it upright.

INGREDIENTS:

  • 5 lbs. Flank Steak, trimmed
  • 5 lbs. Boneless Chicken Thighs
  • 1/2 cup Canola Oil
  • as needed Mexican/Taco Seasoning
  • 1 pack Tortillas, 4.5", corn
  • 1 each White Onion
  • 1 bunch Cilantro, leaves only
  • 1.5 lbs Roma Tomatoes
  • 2 each Jalapenos
  • 3 each Garlic Cloves
  • 1/4 each White Onion
  • 1/2 bunch Cilantro, leaves only
  • as needed Lime Juice, from fresh limes
  • to taste Kosher Salt
  • to taste Black Pepper

GAS/CHARCOAL INSTRUCTIONS:

  1. In a mixing bowl, combine minced onion and chopped cilantro and set aside.
  2. Prepare the grill for direct cooking over medium heat (350 to 450 degrees F).
  3. Place the tomatoes, jalapeno, onions and garlic directly on the grate and grill until charred. Remove from the grill, place in a bowl and wrap with plastic.
  4. After 10 minutes, remove plastic and peel charred part of the tomatoes and jalapenos and discard.
  5. For less spicy salsa, cut jalapeno in half and remove seeds. For spicier salsa, leave seeds and use entire pepper .
  6. Place charred tomato, jalapeno, onion, garlic and cilantro in a blender and pulse until combined but chunky. Season with salt, pepper and lime juice.
  7. Prepare the grill for direct cooking over high heat (450 to 550 degrees F).
  8. Trim the steak & chicken removing large areas of fat. Oil and season the chicken & the steak using salt, pepper & garlic or taco seasoning.
  9. Grill the steak over direct high heat, with the lid closed, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once. Grill the chicken over direct high heat, with the lid closed, until cooked to 165 degrees in the thickest part, 10 to 12 minutes turning once.
  10. Remove the steak or chicken from the grill and allow to rest for 5 minutes. Cut the steak across the grain into thin 1/4 inch slices. Cut the chicken thighs into 1/2" dice.
  11. Place tortillas on the grill and warm for 30 seconds per side. Serve warm with sliced flank steak or diced chicken, salsa and onion/cilantro mixture.
