Rated 5 out of 5 by from Great product to get started We visited a large, military/first responder themed, BBQ Chan and saw an opportunity for a chance drawing of the smiling let, “why not?” Entry completed, made our order and put it out of my present mind. On Father’s Day I received a call from a number that I didn’t recognize, so I put on my best “child voice” impression and answered, rapidly switched to talking about my dinosaur collection and my favorite color, and fortunately for me the person who called explained who they were, why they were calling and asked to speak to “your Daddy.” Well, it turned out that I’d won the smoker and they wanted to know when I could pick it up, “uhm… this afternoon” and the wheels were in motion. After picking the fully assembled and decked out smoker the wheels of creativity began to engage and spin, which my wife recognized and cautioned me to “go slow.” I assured her that I would do do and set off for the local large mega store in search of meat! I located some brisket, decided that two should do it, picked up charcoal and some cherrywood. While preparing the meat, coals had been lit to burn down, wood chips were soaking and the gears were engaged. At that moment I reflected, “perhaps I should look at the Weber site for some ideas and tips,” which later proved to be extremely helpful. Coals settle, some chips on the coals, meat on the racks (there’s two), water “bowel” filled with the wood chip water and topped off with hard cider, the journey began. At the end of six hours, a few adjustments later, the meats were pulled off and foil wrapped, then returned to the grill for the final two hours while we zipped off to a graduation. we had planned for a small group of 30ish people to attend a post party, and during the graduation I kept hearing more people saying that they were coming over and inviting others, “there’s smoked brisket… you should come over.” Terror began to seep in, was the brisket going to be good, would there be enough, etc.. In the end, over 90 people attended, all raved about the brisket and wanted to know what place we’d picked it up from as it was so good. I confessed that this was my first dip in the world of smoking food in a non-survival setting and that I’d followed the directions/suggestions from Weber and things were amazing! I would highly recommend Weber grills and definitely the smokers, they’re easy and intuitive in their designs and operation. I’m looking forward to many more adventures with our smoker.

I've used it for smoking, but it's so much easier and better on the smokey mountain! Now I've got a great grill for smoking along with with my kettle for high temperature grilling. Weber products are well built and last forever, so I'm excited for many years of smoking on my Weber Smokey Mountain!

Built in water pan is a nice feature. 2 racks so you can cook at two different temperatures. Very easy to set up and use. Perfect for chicken, pork shoulder, smaller briskets, and rib racks. Do yourself a favor, though, and get a secondary thermometer. Installed thermometer is inconsistent.

Cooked many many times on it over the years with Great results. The new one has many improvements including built in thermometer , larger water pan, heat shield and many other improvements. Then, I thought I wanted a pellet grill so the WSM and Spirit E-210 went away. Big mistake! So, now the pellet grill is gone and this purchase replaces my original WSM. The WSM is the perfect backyard smoker! Yeah, I replaced the E-210 also.

This is the perfect size for about anyone. Using both racks for when friends visit, or just the top for normal weekends. The heat is very consistent. Takes about 30 minutes to get it all dialed in and adjusted, but that is the funnest part and very satisfying. After you have the heat where you want it, the WSM will pretty much keep it there with almost zero effort. With charcoal and your favorite wood, this is what smoked food is supposed to taste like. Excellent product.

I went with the 18" for my needs it is perfect. Two racks of ribs fit on the top rack with no issues. The 3 bottom vents and single top vent allow for easy temperature control. I found the WSM takes about 15 mins to hit smoking temp, from there it truly set it and forget it. I am glad I finally pulled the trigger. Very happy with my purchase.

It held 250° for 9 hours with charcoal. The water pan also had water in it the next morning! It did an amazing job!!

It is extremely easy to use and many features are self explanatory to even a novice cook. I just smoked a couple of turkey breasts and some salmon. Both came out terrific!!... Future shoppers, best to overlook smoker units that require an electric supplied heat source. They don't leave a nice penetrating smoke ring like the Weber Smokey does. Very satisfied with this purchase.

Biggest noticeable improvements are a deeper water pan and a built-in thermometer- both really good improvements! So far, we smoked 3 pork butts, salmon & some chicken wings - all good! Smoker does not run as hot as previous version, so wood & charcoal last longer.

Rated 5 out of 5 by from Three bone in turkey breasts CDN Thanksgiving. Lower tech is still awesome tech. The original design of this model is still on point. The water pan is a critical part on startup to smoking/cooking. Keep an eye on the water level to keep up humidity inside and temp moderation stable. I recently top racked three bone in turkey breasts. Brined and rubbed. The cooking instructions/briquette/charcoal consumption is an important reference table. You really do need close to 100 blocks for poultry (and the fact I had 22nd of meat). Starting with the Weber chimney, and letting a good base of coals to develop takes 25-30 mins ideally, before the middle ring is placed on the base. Don’t rush your coals. Using two Weber chimneys would speed things up. Smoke wood consumption is low. 4-5 chunks of applewood was plenty. My cooking time was shorter than anticipated, birds were perfect. Use a meat thermometer. The mounted dome thermometer is accurate!
