3 Simple Summertime Recipes That Don't Require an Oven

When the weather's nice, the last thing we want to do is spend too much time in the kitchen! So, we came up with some quick, easy-to-make recipes to share with you. Feel free to add more or less of any of the ingredients listed... it's all based on preference. These delicious mixes, each serving about 8, are perfect to pack for lunch or a picnic with the family. If you or your kids are lactose intolerant, these are great options that don't contain dairy, and they are also vegan. Plus, they only take about 30 minutes to make... that way you can spend more time outside instead of in the kitchen!


Brussels Sprouts


Stir-Fried Brussels Sprouts 


Ingredients:



  • 2 cups of brown rice

  • 10 oz of Brussels sprouts, chopped

  • 3 peppers in various colors (red, orange, yellow), diced

  • 1/4 cup of chopped parsley

  • 2 tbsp of olive oil


How to make


Follow the directions on your package of rice and boil two cups. Drizzle some olive oil into a large non-stick fry pan and sauté the peppers on medium heat. After a few minutes, add in the Brussels sprouts. Let the peppers and Brussels sprouts cook until they’re done, adding the parsley toward the end. Add the cooked brown rice and mix. Let it cool and enjoy!


Pomegranate Salad


Chilled Pomegranate Salad 


Ingredients



  • 6 oz of spinach or arugula

  • 1 cup of pomegranate seeds

  • 2 cups of blueberries

  • 2 cups of raspberries

  • 1/2 cup of sliced almonds


How to make:


Thoroughly mix together in a large bowl. Feel free to experiment and mix in additional fruits like coconut, watermelon, or tangerines. Yum! This mix is more refreshing if it's chilled for an hour in the fridge... that way all of the ingredients can get extra cool before eating.


Chickpea Salad


Chickpea Salad 


Ingredients



  • 2 cans of chickpeas

  • 1 cup of carrots, chopped

  • 1 cup of celery, chopped

  • 1/2 cup of onion, diced

  • 1 cup cherry tomatoes, sliced

  • 1 cup of olives, halved

  • 1/2 cup of basil, chopped

  • 2 tbsp of olive oil

  • Paprika to taste

  • Turmeric to taste


How to make:


Thoroughly mix together all of the ingredients in a large bowl. Chill in the fridge, and then dig in!
