How to Make Mini Frittatas: Cheeses and Veggies and Eggs, Oh My!

Frittatas on a plate Mini frittatas are an easy-to-make, healthy breakfast. They've been quite the craze across Pinterest, and you can make them with any ingredients you can dream up! We've created some of our own: Italian-Inspired Mozzarella Frittatas and Broccoli Cheddar Frittatas. These are delicious, but you can add just about any vegetables, meats, cheeses, or spices you're in the mood for. Some ingredients to try out include bacon, peppers, zucchini, mushrooms, or feta cheese. Mini frittatas can be eaten for breakfast, as a snack, at lunchtime, or even include them as part of your dinner. They're perfect to make while spending time with family on the weekend, and a great cooking activity to do with kids. You can also store mini frittatas in your fridge and reheat them for a ready-to-eat breakfast on the weekdays! 


Italian-Inspired Mozzarella Frittatas


Ingredients:



  • 6 eggs

  • 1/2 cup of diced onion

  • 1 cup of shredded mozzarella

  • 1/2 cup of chopped basil

  • 1 cup of chopped tomato

  • 2 cups of chopped spinach

  • Any additional veggies you'd like!

  • Salt and pepper to taste

  • 1/4 cup of butter

  • Medium-sized mixing bowl

  • 12 count muffin pan

  • Cooking spray


Serving size: 4


Preparation time: 20 minutes


Preheat your oven to 375 degrees. Whisk the eggs in a medium-sized bowl, and add in some salt and pepper. Add in the chopped vegetables and mozzarella. Make sure to mix all of the ingredients thoroughly. Spray the muffin pan with cooking spray. Fill each cup with the mix, and make sure to leave a bit of room at the top for them to rise. Add a dab of butter on the top of each filled cup. Bake them in your oven for about 15 minutes, and periodically check on them to see when they're done. You'll know they're finished cooking when you no longer see the watery appearance of the eggs, and they will have risen in the cups. Wait for them to cool before eating... and then dig in! You can even store the mini frittatas in your fridge and reheat them in your microwave for a healthy, ready-to-eat breakfast. Reheat for about one minute.


Family eating breakfast Broccoli Cheddar Frittatas


 Ingredients:



  • 6 eggs

  • 1 cup of chopped broccoli

  • 1 cup of shredded cheddar cheese

  • 1/2 cup of diced onion

  • Any additional veggies you'd like!

  • Salt and pepper to taste

  • Butter to taste

  • Medium-sized mixing bowl

  • 12 count muffin pan


Serving size: 4


Preparation time: 20 minutes


This one has similar steps to the previous recipe. Preheat your oven to 375 degrees. Whisk the eggs in a medium-sized bowl, and add in some salt and pepper. Add in the broccoli, onions, and cheese. Stir the mixture thoroughly. Spray the muffin pan with cooking spray (that way the frittatas won't stick to the cups)! Fill each cup with the mix, leaving a bit of room at the top for them to rise. And a dab of butter on the top of each filled cup. Bake for about 15 minutes, and periodically check on them to see when they're done. Let them cool... and enjoy!
